The Ramón Bilbao Verdejo is made from Verdejo grapes of vineyards of different ages located in some of the largest towns in the DO Rueda: Serra, Rueda Medina, Pozaldez.
Wine harvesting is done entirely at night. This way we guarantee the lowest temperatures and less oxidation for the grapes since the product is thus protected from the sun light. The process is very fast. This is why the machinery used in the winery is of a big size and with a great capacity.
The grape juice is cooled really fast and its cleaning is done due to gravity once the fermentation starts in two or three days. The temperature is always under control and the process of cleaning is really strict. Whenever the grape juice or the wine is moved in the winery, nitrogen is used to avoid oxidations and thus preserve all the possible characteristic bouquets.
It presents a golden bright and almost luminous color with lemon crust signs. The nose is fragrant and varietal, a feature which for this first vintage has taken the utmost care. The bouquets are typical of passion fruit, anise and fennel. It shows a tropical and syrupy background with a balsamic essence reminding us of aromatic herbs.
