Cabernet Sauvignon, the most wine international

Cabernet Sauvignon is probably the most famous grape variety in the world, it is also known as Petit Cabernet or Petit Vidure. It generates one of the largest production of red wine in the world and is cultivated in the all the major wine-producing countries.

Of French origin, it is a cross-breed between the Cabernet Franc and the Sauvignon Blanc during the 17th century in the southwest of France. It is the variety used for the red wines of Burgundy, to whom it owes its prestige and fame.

It is the most international grape, due to its great ability to adapt to all kinds of climates. The ease with which it is grown is due to the thickness of its skin and its superior resistance to frost and decomposition.

This variety is known for its dense and aristocratic tannins, deep color, complex fruit aromas and elegant structure and it is ideal for wines destined to age in oak.

The wines produced exhibit an intense, well covered color. Fairly tannic in their youth, they have a distinctive range of floral, fruit and vegetable aromas. The aromas may become even more complex after a stint in oak, showing notes of smoke, cedar, creosote, incense, licorice and truffle perfume.

Some wineries incorporate this grape in small doses to confer complexity to their local red varieties. It combines perfectly with red meat thanks to its strong flavour, also stuffed peppers, lamb and game. Grilled meat is of course an excellent company as well for this variety.

We would like to recommend a few wines produced from this excellent grape, in greater or lesser degree, throughout the world.

From Chile we recommend Don Melchor 2008; one of the greatest exponents of the Chilean Cabernet Sauvignon. This country is one of the largest producers of Cabernet in the world.

Australia produces wines with an excellent quality price ratio, full of fruit and flavor. Pierro Cabernet Sauvignon Merlot 2001 is made with 5 different grape varieties in order to achieve its consistent character; the Cabernet Sauvignon provides power and longevity.

From its home country, France, we recommend a Château Pavie 2005 (98 points Parker). It has a deep and dense purple color with violet hues that highlight its youth. We may distinguish currant, blueberries and a selection of black fruits. The first impression on the palate is flawless, and the quality of the vintage becomes evident when the taste evolves. The wine is full-bodied, both tight and supple at the same time. Everything comes together to create an exemplary balance.

Finally, from Spain, we bring you Abadía Retuerta Selección Especial 2009. It has a soft and friendly attack, giving way to a much greater aromatic richness and incredible expressiveness. It has a complex, very attractive bouquet with a multitude of floral aromas (primarily berries).
